Peanut Butter Blondies

A quick and simple, dairy free and gluten free treat.

  • ½ cup smooth natural peanut butter
  • ¼ cup coconut oil melted
  • cup coconut sugar (also called palm sugar)
  • 1 large egg
  • 2 tbsp unsweetened almond milk or any dairy free milk
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • ¾ tsp baking soda
  • ¼ tsp salt


  1. Preheat oven to 350°F. Line an 8x8” square baking pan with parchment paper and set aside.
  2. In a bowl, whisk together peanut butter, coconut oil, coconut sugar, egg, almond milk and vanilla extract until smooth. Stir in the almond flour, baking soda, and salt.
  3. Spread evenly in prepared pan and bake for about 20-22 minutes, or until lightly browned.
  4. Cool completely, and then cut into 16 squares. Store in an airtight container.
