Vegan Paleo Waffles

The best ever vegan paleo waffles. Perfectly fluffy, crunchy and spongy.

Ingredients

  • 1 cup almond flour
  • 1/2 cup tapioca starch
  • 2 tsp baking powder
  • 1 tbsp ground chia seeds
  • 3 tbsp warm water
  • 1/2 cup unsweetened almond milk
  • 1 tsp apple cider vinegar
  • 1/4 cup avocado oil or grapeseed oil or melted coconut oil

Instructions

  1. In a medium bowl combine almond flour, tapioca starch and baking powder. Whisk until combined.
  2. In a separate large bowl, mix together the chia seeds, water, almond milk and vinegar.
  3. Pour the dry ingredients into the wet ingredients and use a spatula to mix. Allow to sit for at least 2 minutes.

  4. Pour the batter into a waffle maker and bake until brown (approximately 5 minutes).
  5. Makes 2 large waffles.

  6. Serve with fresh berries, nut butter, coconut oil, coconut cream, dark chocolate shavings, cinnamon or pure maple syrup.
