Vegan Paleo Waffles
The best ever vegan paleo waffles. Perfectly fluffy, crunchy and spongy.
- 1 cup almond flour
- 1/2 cup tapioca starch
- 2 tsp baking powder
- 1 tbsp ground chia seeds
- 3 tbsp warm water
- 1/2 cup unsweetened almond milk
- 1 tsp apple cider vinegar
- 1/4 cup avocado oil or grapeseed oil or melted coconut oil
In a medium bowl combine almond flour, tapioca starch and baking powder. Whisk until combined.
In a separate large bowl, mix together the chia seeds, water, almond milk and vinegar.
Pour the dry ingredients into the wet ingredients and use a spatula to mix. Allow to sit for at least 2 minutes.
Pour the batter into a waffle maker and bake until brown (approximately 5 minutes).
Makes 2 large waffles.
Serve with fresh berries, nut butter, coconut oil, coconut cream, dark chocolate shavings, cinnamon or pure maple syrup.
