These smashed breakfast tacos are currently a household favorite when it comes to brunch. They are the best dang brunch ever!!! Watch the video or check out the recipe below to see how to make at home.
Smashed Breakfast Tacos (Cheese Stuffed) – Dairy Free & Gluten Free Option
Two corn tortillas fried together with the cheese of your choice, a layer of crispy meat smashed on one side, topped with a poached egg, sriracha mayo and green onions.
- 4 corn tortillas
- 1/4 cup shredded cheese of choice dairy free option: Violife shreds or Nabati shreds
- 1 tbsp oil of choice
- 1/2 lb ground meat of choice I use ground pork with a bit of seasoning salt & spices or Italian sausage is also great
- 2-4 eggs
- 1/4 cup mayo of choice
- 2 tbsp sriracha
- 1 tbsp chopped green onions
Wet three pieces of paper towel and wrap around the stack of 4 tortillas. Microwave for 45-60 seconds to steam. Separate tortillas and add cheese to two tortillas and then place the other tortillas on top to make a “sandwich”.
Add oil to a large frying pan, melt over medium heat and add “sandwich tortillas”. Cook until crispy on one side and then turn off heat and transfer to a cutting board. NOTE: if you do not want to stuff your tortilla with cheese simply go onto the next step to add meat directly to one side of your warm tortilla
On the uncooked side of the tortilla press a thin layer of ground meat all the way to the edges.
Wash your hands and carefully transfer back to your frying pan, placing the raw meat side face down. Fry until the meat is fully cooked.
While the meat is cooking, cook your eggs to your liking. I like to serve with poached or fried eggs.
In a small bowl add your mayo and stir to mix. Chop your green onions and set aside.
Once the meat on the tortillas is cooked transfer to a plate and layer with your cooked egg, sriracha mayo & green onions.
Serve with whatever other toppings of condiments you might like such as pickled onions, salsa, sour cream, lettuce, chopped tomato, etc. Enjoy!
