
Do You Love Cookies?
If you’re a cookie lover then you have come to the right place…. introducing my LivNourished Super Cookies. These here are my favourite cookies for a quick snack, family get together, travelling, camping or just a Friday night at home.
They are loaded with protein, healthy fats and fibre and sweetened with unrefined sugars. Does it get any better than that? They are also vegan, dairy free, gluten free and grain free. And the flavour of cinnamon, chocolate, almond butter and raisins will have you drooling.
I’ve also added in some maca root powder. Maca root is a Peruvian root that is known as an adaptogen. Adaptogens help to balance the body to its happy medium, whether you are in excess or deficiency. Maca in particular is very supportive of the adrenal glands, sex hormones and helps to improve energy in the body. I always use a gelatinized maca root powder, as it is much easier to digest. Start low and slow to work your body up to an amount that is suitable for you. If you are not interested in adding this ingredient you can easily omit it from the recipe.
Another unique ingredient to this recipe is Lucuma. Lucuma is a Peruvian fruit that is dried into a powder and can be used as a low glycemic, natural sweetener. It offers a very light sweetness with notes of caramel and sweet potato flavour. Again, this can be omitted from the recipe if you do not have it.

These cookies are also great for meal prep. Double or triple the batch size and store in the freezer for when you are needing a quick, healthy snack.

LivNourished Super Cookies
These cookies are a great option for a quick and healthy snack. Simply freeze and grab when needed. They are vegan, gluten free, grain free and nutrient dense.
Ingredients
Wet Ingredients
- 1 tbsp ground chia seeds
- 1/4 cup water
- 2 tbsp coconut oil
- 1/4 cup unsweetened apple sauce
- 2 tbsp almond butter
- 1 tsp vanilla extract
Dry Ingredients
- 1/2 cup hemp hearts
- 1/8 tsp unrefined salt
- 1.5 tsp cinnamon
- 1.5 tsp lucuma (optional)
- 1/4 tsp maca (optional)
- 1 tbsp raisins
- 1.5 tbsp dark chocolate chunks (I used 80% dark chocolate cut into chunks)
- 1/4 + 1/8 cup unsweetened shredded coconut
- 1/8 cup pumpkin seeds
- 1 tbsp cacao nibs (optional)
Instructions

Preheat oven to 350° F. Line cookie sheets with parchment paper.

Grind chia seeds in a vitamix or coffee grinder. Mix ground chia seeds with water and let sit while preparing other ingredients.

In a saucepan melt coconut oil, almond butter and apple sauce over low heat. Remove from heat and transfer to a large mixing bowl. Stir in vanilla.

Combine all dry ingredients into a separate large mixing bowl and mix together.

Add chia and water mixture into wet ingredients and mix together.

Pour dry ingredients into wet ingredients and mix together.

Make 1 inch balls and press into cookies with fork. Bake for 15-18 minutes. Makes 10 cookies.
