
A couple years ago there was a craze going around the internet for Dalgona coffee which is creating a coffee foam with instant coffee and sugar to put on top of milk. My food science brain couldn’t help but try this out. And it works with decaf instant coffee, pure maple syrup and dairy milk alternatives. The proteins & fat in coffee act as surfactants to trap air into the coffee matrix while whipping, therefore creating a foam. Although white sugar stabilizes the foam better, you can also create a fancy, fun and less sweet drink using pure maple syrup. Now you can enjoy a decaf dairy free Dalgona Coffee in the afternoon if you like.

Decaf Dairy Free Dalgona Coffee
Ingredients
- 1 cup unsweetened dairy free milk I used almond milk
- 4-5 ice cubes
- 1 tbsp decaf instant coffee
- 1/2-1 tbsp pure maple syrup
- 2 tbsp boiling water
Instructions

Pour ice and milk in a glass.

In a medium bowl add instant coffee, pure maple syrup and boiling water. Begin beating on low with an electric beater for 30 seconds, increase speed to medium for additional 1 minute and then high for another 1-2 minutes until a frothy, thick foam is formed.

Pour foam on top of ice milk. Of course take a picture and then mix together to enjoy your iced coffee.
