This Creamy Balsamic Dressing is one of the quickest recipes you can make to have a simple, low cost salad dressing on hand. And the ingredients are things you might typically find in your fridge to begin with. Try it on top of your favorite salad or try it on something new like my Super Harvest Salad.

Although this dressing is made with vegan mayo, if you do not have a preference you can also use regular mayo. I use a balsamic vinegar that is available in Edmonton at the Evoolution, a speciality vinegar & olive oil store called the Traditional 18 Year Dark Balsamic Vinegar. It’s a sweet, thicker vinegar and if you do not have something similar I would suggested reducing the amount of vinegar in the recipe and adding a touch of pure maple syrup to balance out the flavours.
Creamy Balsamic Dressing (Nut Free & Vegan)
Ingredients
- ½ cup vegan mayo I use Follow Your Heart Vegenaise or Hellman’s Vegan Mayo

- 1 tsp Dijon mustard
- 1 tsp fresh lemon juice I also really love Santa Cruz Organic Lemon Juice
Instructions
-
Place all ingredients into a blender or food processor and blend on high until smooth. You can also mix by hand by placing all ingredients into a medium bowl and whisking together with a fork. Using a blender makes the dressing smoother.
