

Holy Guacamole!!!
Do I need to say anymore? Brad and I are huge lovers of authentic Mexican foods and with it being Cinco de Mayo tomorrow you can bet that I am going to make a HUGE bowl of guacamole. Honestly, we usually have some kind of Mexican cuisine on the weekly, whether it be guacamole, nachos, tacos, taco salad bowls, burrito bowls or pico de gallo. This means I usually always have avocados, cilantro, limes, tomatoes and onions in our house. Staples!!!
If you love guacamole as much as me this is your go-to recipe. I used my fine tuned pallet to replicate one of the best guacamoles I have ever eaten, which was surprisingly in Las Vegas at El Segundo Sol Tacos and Margaritas. We both agree this is dang good guac! Since no one is going to be getting to Mexico, or even Vegas, at the moment I highly suggest picking up these 6 simple ingredients to make your own at home this week!


Authentic Guacamole
Ingredients
- 1.5 avocado, peeled and pitted
- 1.5 limes, juiced (use the lime juice from 1.5 limes)
- ½ roma tomato, diced
- ¼ white onion or red onion, chopped
- 2 tbsp fresh cilantro, chopped
- ¼ tsp unrefined salt (I use fine pink Himalayan salt)
Instructions

Place all ingredients in a large bowl or stone mortar.

Mash with the back of a fork or with a pestle until desired consistency.

Serve with organic corn chips, veggie chips or fresh cut vegetables.
